This iteration of Zenne y Frontera is a Single Barrel Oloroso Geuze.

This particular Zenne y Frontera is the single bottling of a single barrel, with the addition of jonge lambik to give it a final push in the bottle. The barrel is at least forty-year old and has had Oloroso for the whole time. The barrel held a jonge lambik for a complete year, after we bottled it, while adding a small portion of jonge lambik.

We aged it for almost two year in the warm room before releasing it. The weighted average age of the lambikken in this bottle is 30 months.

This iteration of Zenne y Frontera is a Single Barrel Pedro Ximénez Geuze.

Beginning of 2019, we filled a freshly emptied old Pedro Ximénez barrel with jonge lambik and let it age for another year. Mid-April 2020, we blended that one barrel with a bit of more jonge lambik to create an effervescent refined sherry lambik, or a sherry geuze if you will. The weighted average age of the blend upon release will be older than thirty-five months. There were 368 bottles bottled, but we already shared a few among us, so a bit less are left. 100% 3 Fonteinen brewed lambik.

Pedro Ximénez sherry is the sweetest and darkest of sherries - due to the residual sugars from the sun-dried grapes with the same name - combined with typical muted oxidative characteristics and an aromatic abundance of typically figs, dates and raisins, and liquorice and dark chocolate.

After the primary fermentation, the PX wine is muted and subjected to a solera process. That is how typically, highly qualitative PX sherries have an average weighted age of over 20 years when bottled.

Two Barrel Oloroso Lambik

Deze Zenne y Frontera is een blend van twee fijne Oloroso vaten. Deze lambik ging recht van het vat naar de fles zonder toevoeging van enige andere lambik en zonder bedoeling om dit verder te laten vergisten. Indien ‘m plat is, is dat normaal. Indien niet, is der intussen iets magisch gebeurd. 100% 3 Fonteinen lambik. Slechts 614 flessen gemaakt (minus diegenen die we zelf proefden).

This Zenne y Frontera is a blend of two fine Oloroso barrels. This is a straight barrel-to-bottle lambik without the addition of any other lambik nor with the aim to let this continue to ferment. If it’s flat, it’s normal. If not, some magic happened meanwhile. 100% 3 Fonteinen. Only 614 bottles produced (minus the ones we tasted ourselves).

This Zenne y Frontera is a blend of ten different sherry barrels - nine Oloroso barrels and one Amontillado barrel. The Oloroso barrels were more than fourty years old. The lambics originate from five different brews and were all a good year old when filling the sherry barrels. Accordingly, the weighted average age upon bottling was a tad more than 24 months. 100% 3 Fonteinen.

Single Barrel Amontillado Sherry Geuze

Deze Zenne y Frontera is een blend van twee jaar oude lambik afkomstig van één enkel Amontillado vat (85% van de blend) en drie verschillende jonge lambikken (15% van de blend) met de bedoeling een Oude Geuze te creëren met de verfijnde aroma’s van Amontillado en sherry vaten. Het resulteerde in een prachtige “sherry Armand & Gaston”. 100% 3 Fonteinen lambik. Slechts 774 flessen gemaakt (minus diegenen die we zelf proefden).

This Zenne y Frontera is a blend of two year-old lambic coming off one single Amontillado barrel (85% of the blend) and three different young lambics (15% of the blend), with the aim of creating an Oude Geuze with the refined aroma of Amontillado and sherry casks. This turned out to be a powerful “Sherry Armand & Gaston”. 100% 3 Fonteinen. Only 774 bottles produced (minus the ones we tasted ourselves).

Beginning of 2017, we acquired a second set of 21 Oloroso and 7 PX barrels and aged young lambik on them for another year. We lost 4 barrels along the way and we blended 12 barrels for this blend and 12 barrels for batch 6 (blend 50). Average age of over 2,5 years upon release, no backblending. 100% 3 Fonteinen brewed lambik.

From the original first 12 barrels purchased in 2012, only seven survived after two solera cycles. This batch is a blend of two of these barrels, blended with lambics from the second run of sherry barrels and backblended with a small portion of young 3 Fonteinen lambik. Hence, the average age of these lambics is still over 45 months. Because of the sensitivity of the lambik pellicle compared to that of sherries, the solera method will be discontinued.

With the first version of Zenne y Frontera, 9 Oloroso barrels and 3 PX barrels were filled with young lambic. After one year of oak maturation, the characteristics of the finest of sherries and the 40 year old casks integrated with the 3 Fonteinen lambic. Only half of the volume of all casks was blended and bottled and the barrels were filled again with young lambic - our interpretation of the "solera" method.

For this second edition, again only half of all barrels was blended and bottled. After another 17 months of bottle maturation, the average age of this naturally refined traditional lambic beer is more than 45 months. This batch is limited to 3,000 bottles. Read Less
